Abstract: “When you get a beer and have a sip and think ‘that doesn’t taste right,’ it’s probably because of biofilm”Biofilms, known to accumulate in draught beer lines, are self-organized communities of microbes that may also contain beer stones, proteins, and/or lipids. Biofilms are more tolerant to disinfection than isolated microbes and removing an established biofilm from a system is challenging. The biofilm forms when harmless bacteria, brewing yeast and other residual solids form a coating on the inside of draught lines. In this talk Prof. Goeres (Montana State University, USA) will discuss results of research study undertaken to understand the impact repeated exposure to cleaning chemistries has on biofilm growth, kill/removal, and subsequent regrowth in beer draught lines.
